This Little Piggy Goes to Atkins

Hmm I use almost the same for my microwave almond cake:

40g almond flour
1 egg
Small pinch of baking powder
Cinnamon
Sweetener
Dash of alpro

So no butter - although you can add butter and could probably skip the alpro - I just add a dash to make the batter smooth.

Micro for 2 mins, yummy. I've used the same recipe for little cakes done in the oven too.

Baking powder might be the bitterness, or the coffee (alpro makes a good, plain base for flavors), or a dash too much of one of the spices?

(I only ever make enough for one person for one day or I'd end up eating too much! Hence small portion sizes.)

40g almond flour / 3g carbs
1tsp cinnamon / 2g carbs
1/2 tsp baking powder / 0.6g carbs
1 egg / negligible
Dash alpro / negligible
Sweetener / zero

So 5.6 for the recipe, serves one. You need to be careful of dried spices - surprisingly carby!

mmm cake............ hope u manage to sort the cake recipe then we can all have a dabble xx

I'm having a harrumph this morning. I've been feeling bloated these last few days, to the point where my clothes are much tighter. It's not totm, could be something I've eaten, could be ovulation or, horror of horrors, I COULD HAVE PUT ON WEIGHT!! I do start to panic just before weigh in day (Saturday), so I'm trying to discount the putting on weight theory.
It was interesting to watch the food hospital last night. They featured a little boy who had 3 types of epilepsy, and suffered up to 300 seizures a day. The prescription....a ketogenic diet, and after a month on it he didn't suffer one more seizure! I have found that the majority of things featured on there were prescribed what was essentially a lower carb diet. They just never call it that, opting instead for lower GI, or another name.

Thank goodness it's payday, I can finally order some contact lenses, and a spiralo. Busy day today, work and then monthly shop at aldi and Tesco.

yes its funny how the medical profession are loathed to actually admit that old Doc Atkins was actually onto something all those years ago!!

Nutritional ketosis is a standard prescription for kids with severe epilepsy now. One of their sites is where I originally got the cocoa bark recipe from - their ratios are much higher fat, like 80 percent fat, 15 percent protein. It made me cry to see how much work these mothers put into menu planning for their kids - those ratios have to be spot on every day.

Ketosis us also prescribed now for people with certain sleep disorders and it's being used in experiments aimed at preventing alzheimers.

Eulogise away hun!

A moron I work with decided that Atkins woe is to blame for me having a cold! She screeched "You don't get enough fruit in your diet", completely ignoring the fact that I was eating my berries and yoghurt while she was screeching...honestly! :D

Mention to her that dark leafy greens like kale, broccoli and cauliflower have more vitamin c than oranges (and a wider range of nutrients overall) and you eat plenty of those. Fruit is entirely unnecessary in any diet - there is no nutrient that can only be obtained from fruit.

(you could also mention that repeated studies show that added vitamin c in your diet won't prevent colds - its only ever been seen to help people who already have deficiencies).

Such a busy day, went from work to Tesco, a very good friend desperately needed a friend so she met me there and we had coffee. From there home, collected husband after his sleep (working nights), off to aldi, home, unpack, split meat for freezing, cook fry up, eat, let steam out of head! Haven't had chance to eat until now, so that was a good fast.

I hate it when know all/know nothing work mates chime in with their pearls of crap, ill informed nonsense!

I've made a kings cake to this recipe http://lowcarbdiets.about.com/od/desserts/r/kingscake.htm
I think this one will be nice. The batter was lovely, it smells very nice and the structure looks good.
