This Little Piggy Goes to Atkins

Had a gorgeous lunch, Nigel Slater made it on his last episode. Cooked chicken breast shredded and added to hot oil (he used ground nut, I used coconut), add to that 1tsp Chinese 5 spice. Cook for 5 mins then put into lettuce leaves as a wrap with a tsp of illegal fruit chutney (your choice). Really crispy and tasty, and the house smells lovely!

We're all done, she's in, she has a bed made up and cosy, somewhere to sit amongst the boxes in the living room and watch TV, a useable kitchen and bathroom. She is a happy mummy, oh and the 18 year old cat survived the journey!
 
WI today, sts. Not too concerned, have been having toilet issues which could account for some. Will check how my measurements are doing later.
 
Since 1st October I have lost:
1.5" from each bicep
1" from chest
2" from waist
2" from hips
1/2" each thigh

I am very happy with that.
 
It's been another productive day in the smiley house. I've made celery & Stilton soup and meringues. Don't be put off by the yellow tinge of the meringue, apparently the splenda does that. These meringues were dead simple, and are crunchy and sweet. I just hope they stay crunchy.
3 egg whites whisked til in firm peaks, then slowly whisk in 14 tablespoons splenda. Put on baking paper and cook at 120° for 1 hour.

Having now eaten a meringue as Eton mess, here are my observations:
They are a fantastic alternative meringue, sweet, crunchy and light. They are not as robust though, so any moisture (ie the cream and berries) will soften them a bit. The perfect way is to have separate on the plate/bowl. I don't think it would work as Pavlova.
