No, used gran splenda. Don't put them in a tupperware type thing to store though, the centres are still chewy and they soften if you do. I'll be putting mine back in the oven to crisp up today.
 
I've rebaked the meringues today and they were fully dried and crispy. I think the upshot of this is that it would be better to cook them at 120° for 1 hour, and then leave them in the oven, switched off, for the day or night, depending when you cook them of course. That way they should be fully crisp.
 
What a scrumptious dinner. We had beef brisket slow cooked yesterday for 15 hours, yummy it fell apart. Broccoli, cauli, a few green beans and Yorkshire puddings made with a bit of ground almond, tablespoon coconut flour, eggs and cream poured into very hot coconut oil and baked on 220° for 10 mins.

So Mr grumpy and I both fancied something sweet with a coffee, but actually were not hungry. So, have made a batch of little brandy truffles and they're in the freezer. That way we'll have one to cure the sweet craving and no more. Feeling very restrained.
 
Whipped double cream, soft butter , sweetener, cocoa, des coconut & brandy. No proportions, I just kind of threw them together. They were very soft, and needed putting in the freezer to harden. They are rich enough that you only need one.
 
I went to boots to get liquid herm and they had never heard of it, maybe its only in the bigger branches, any other suggestions?
 
Yum, those truffles sound lovely....the only sweet think I make at the moment is bark and chocolate almond mims

They're very nice Sammy, luckily they're too rich to have more than one!

Home from work now, and eating some cold rhubarb and cream. I'm watching the news and glad I'm not in the US. How frightening.
Tea is going to be pan fried salmon with broccoli. I've got a Skype date with my family in NZ at 6 pm, which will be lovely.

Salmon and pesto go great together, it's really the only way I can eat salmon :)

Unfortunately both computers failed me for my Skype with NZ. I'm pretty fed up about that because they're going away for 10 days today, and I've really been looking forward to chatting. Oh well, I'll be sending a long newsy email instead.

I use Apple's Facetime to keep in touch with my son in America and it works great.
